Dinner is always a dilemma. If the preparation takes more than half an hour on a workday, count me out. I'm way too tired to think about peeling, chopping, measuring, and cooking. Dinner is always a dilemma. If the preparation takes more than half an hour on a workday, count me out. I'm way too tired to think about peeling, chopping, measuring, and cooking. Therefore, I've proclaimed that the rest of my working life will consists of easy to prepare meals. The tasty Egg Roll in a Bowl fits this description perfectly.

INGREDIENTS:

  • 2 lbs of lean ground beef (or turkey if you prefer it)
  • 2 cloves chopped garlic (I buy jars of chopped garlic, so I use a teaspoon.)
  • One chopped onion or chopped scallions (You could buy this chopped and frozen.)
  • One teaspoon ginger spice (although I think I might try raw chopped ginger in the future)
  • pinch of Himalayan salt
  • One package sliced mushroom
  • 1/4 cup soy sauce, fish sauce, coconut aminos, or beef broth (choose your lifestyle preference)
  • One package of prepared coleslaw mix

Brown beef and drain. Add garlic and onion. Saute for a few minutes. Add spices, mushrooms, and liquid of choice. Cook for two more minutes while stirring. Last, cook on medium heat for enough time that the coleslaw cooks down.

Difficulty: Easy

  1. I do something similar. Instead of ground turkey, I use Italian sausage. I haven’t added mushrooms but think I’ll add that next time. Egg roll in a Bowl is a hit at our house.

  2. I love this recipe with only a few adjustments. It’s great with coconut aminos, Italian sausage and slivers of almond for crunch.
