I'm sure this has a real name. An official name. For the life of me, I can't remember it. It should be called Da Bomb Roast because it's yummy, easy to fix, and only has a few ingredients.
That's how we roll at my house.
I won't sing the praises of the Instant Pot Pressure Cooker. You've probably heard it all before. You're either a believer, or you don't own one. I cook a few things regularly in my cooker, and this is one of them. This is what you'll need:
stick of butter
package of Italian dressing mix
package of ranch dressing mix
jar of banana pepper rings
2 lb (or larger) chuck roast
Cup of beef bone broth
Honestly, I've switched up the ingredients so many times it's ridiculous. Don't have pepper rings? Cut up on onion and a few jalapeños.
No Italian dressing mix? Add Lipton onion soup mix instead.
Don't have a roast? Use whole chicken breasts and lessen the cooking time. You are in charge of your kitchen. You really can't go wrong.
I set the timer on the Instant Pot for an hour and ten minutes when I do a roast this size. Here's a cheat sheet from Instant Pot on cooking times. They say less time, but they also say to use chunks of roast. I leave mine whole. I literally dump all of this in the pot in the order listed above.
If you've never cooked with a pressure cooker, make sure to follow the appliance directions. I don't want to be responsible for steam burns. That said, here is a tip. If you are always in a hurry, like I am, you can do a manual release of steam at the end of the cooking time. Do this by covering the steam release with a dish towel (to protect you) and stand away from the appliance. Using a wooden spoon handle, push the release valve.
After the steam releases, open the lid and dump some vegetables on top. I microwave those frozen steamer bags of green beans or mixed veggies to add to my roast for a low carb meal.
